Artisan Bread in a day is perfect bread making course for anyone who regularly makes bread at home but wants to improve their skills. Discover the magic of sourdough and practice some new techniques and styles of bread including baguette, fougasse, croissants and brioche.
This hands-on course is aimed at anyone who has some experience of baking bread but wants to learn more and raise the level of their understanding. Discover how to bake breads with a wild yeast sour dough and enriched yeast doughs.
You will learn about wild yeast and the science of long fermentation and will make and learn how to care for your own sour dough starter. You will learn the techniques of an artisan baker and practise mixing, proving and baking to discover how to create different flavours and textures to achieve the perfect crust and crumb. You will make a range of loaves including proper baguettes and fougasse to take home and show off to family and friends!
As well as sourdough baking we will look at enriched doughs to make croissant, brioche and Danish pastries.
Led by Anna Colquhoun who also teaches Food Safari’s London cookery courses. Anna is an experienced cookery teacher and food writer who trained professionally at the Tante Marie Cooking School in San Francisco, took more specialised courses at other schools, including the San Francisco Baking Institute, and worked as an intern at Alice Waters’ legendary restaurant Chez Panisse in Berkeley, California.
You will enjoy a delicious lunch showcasing different styles of bread including those you have made.
You will take home some of the breads you have made as well as some recipes and resources to continue baking at home. Numbers will be limited to 14 people, so Anna is able to work with each of you individually. You will leave with your loaves, a pot of sourdough and a lot of artisan bread making skills that you will be able to put into practice at home.

Come on board our chartered boat on the river at Orford and we’ll pull up the pots to find lobster, crab and other shellfish. Back on dry land visit Pinney’s of Orford traditional smokehouse and learn how oysters have been cultivated in Butley Creek since the Romans. After a relaxing seafood and smoked fish lunch you can learn how to shuck oysters and carve smoked salmon.
