Evening Butchery Classes

We’re delighted to be teaming up with artisan butcher, Jamie Willows, at his brand new Rose House Butchery in Ipswich for our 2013 evening butchery workshops.
We look at a different type of meat each month – pork, lamb, beef and poultry and for the Christmas season a three bird roast.
Going behind the scenes at the Rose House Butchery you will learn the meats story from farm to abattoir to butcher to your plate. The Rose House butchery uses only traditional and rare-breed meat locally sourced.
Working in small groups you will break down the meat into the key primals, learning about the different cuts and how to use them in the kitchen. You will learn good knife skills and you were learn how to bone out the joints as well as the art of the butcher’s knot. Finally you will have a go at stuffing, rolling and tying a joint to take home.
The classes are relaxed and informal with a maximum of 12 people. We start with a beer or glass or wine over introductions and round off the evening with a slow cooked roast with bread and salad. There’s plenty of time to put your questions to the butcher and chat to others about what you’ve learned over a glass of wine.
Places are limited to 12 which helps us to give you the best one to one tuition possible.
All workshops take place on Friday evenings starting with drinks at 6.45 and wrapping up after supper at about 9.30.
