This relaxing day out in Orford will take you behind the scenes of one of Suffolk’s best-loved artisan food producers, Pinney’s of Orford. Pinney’s are well known for their smoked fish and oysters and their unpretentious restaurant, The Butley Orford Oysterage. The smokehouse and oysterbeds are not normally open to the public except on Food Safari.
We start the day with a trip on the River Ore around the international nature reserve Havergate Island and the largest shingle spit in Europe, Orfordness, home to secret military research in the 2nd World War. We often see seals as well avocets, turns and other unusual birds. But it’s the lobsters we come for!
Our skipper will demonstrate lifting and baiting up of lobster pots and we will catch lobsters of all sizes, edible, spider and hermit crabs, and other shellfish. Weather and tide permitting we may also put down a net for herring or other fish.
Back on dry land we’ll take a behind the scenes tour of Pinney’s at Butley Creek, where oysters have been cultivated for centuries. You will learn about the life cycle of oysters and whether you really shouldn’t eat them when there’s an ‘r’ in month. Richard Pinney started smoking fish here in the 1950s and his unique smoking method is still used relying on expertise and experience rather than mechanisation.
We’ll return to Pinney’s own restaurant, The Butley Orford Oysterage in Orford’s pretty market square. After a delicious lunch showcasing Pinney’s smoked fish and oysters you will have the chance to learn how to shuck oysters and carve whole smoked salmon.
What you will get out of the day
You will experience the thrill of finding lobsters and crabs in the pots and learn their habitat and breeding. You’ll see how oysters are cultivated, learn about the varieties and see them fresh from the river bed. You’ll learn how Pinney’s smoke their fish and have some fun learning how to open oysters and carve smoked salmon.
You will take home a pack of information and recipes.
