Wild Meat in a Day – Prepare, Cook & Eat!

Game seems to be all the rage at the moment, it’s sustainable, healthy and nutritious.
Meet Robert Gooch and Ray Kent of the Wild Meat Company who will share their wealth of experience about shooting, hanging and ageing wild game. Go behind-the-scenes at their butchery and see their game larders full of wild game shot in Suffolk. You will learn about different species of game, their habitat and seasons and see a range of wild game shot on local farms and estates.
Then it’s time to get hands-on! You will learn to bone, stuff and roll a pheasant and skin and joint a rabbit and you will take home all the meat you prepare to show off to family and friends.The butchery workshop will focus on knife skills and give you some tips for preparing game at home.
Later you will be able to relax while you watch Madalene Bonvini Hamel from the British Larder demonstrate some mouth-watering game dishes such as partridge and rabbit terrine and grilled marinaded partridge with jerusalem artichoke salad. Madalene will share pick tips, ideas and advice for cooking game in your own kitchen.
Finally we’ll enjoy a gourmet three-course game lunch with plenty of wine, followed by coffee.

You’ll leave the day with the confidence and inspiration to prepare your own game at home, a handful of creative recipes to impress your friends and some of the game you have prepared yourself!
The ticket price includes a three-course lunch with wine, the meat you’ve prepared to take home, a pack of information and recipes and a Food Safari apron.
