Here at Food Safari HQ we’ve been beavering away to bring you an exciting programme of foodie events in 2009. Working with some of Suffolk’s best loved producers including Sutton Hoo Chickens and Pinney’s of Orford we’ll offer you the chance to meet the dedicated and inspiring people behind these award-winning products and hear their fascinating stories.
We’re delighted to announce that our first events for 2009 will be ‘Wild Meat in a Day’ a hands-on day of preparing, cooking and eating a variety of local game. Under the professional guidance of The Wild Meat Company, one of Rick Stein’s Food Heroes, you’ll get to pluck and draw your own birds, learn some chef’s top tips and enjoy a gamey lunch of the results. If you are stuck for a last minute Christmas present, why not book someone a place on the game day. See below. We’ll bring you news of more events in our next newsletter. Wild Meat in a Day will be hosted by The Anchor at Walberswick, near Southwold and we hope this will be the first of many Food Safari events there.
The Anchor has undergone a transformation in recent years under the expert hands of Mark and Sophie Dorber, well known from their days at The White Horse, Parsons Green in West London. Sophie’s insistence on the best, seasonal, local produce combined with Mark’s passionate expertise for beer and wine, ensure that The Anchor is fast becoming both a welcoming local – and a gastronomic destination.

Wild Meat in a Day
Prepare, Cook and Eat!

The Anchor at Walberswick
Food Safari’s Wild Meat in a day is exciting and hands-on game experience preparing, cooking and eating a variety game. Whether you are a novice or a more experienced cook, nervous of feathers or keen to get plucking, there’ll be something for you.
Robert Gooch and Ray Kent of The Wild Meat Company, one of Rick Stein’s Food Heroes, will give you the confidence to prepare game at home as well as sharing with you a wealth of experience about local game. Hosts for the day are Mark and Sophie Dorber of The Anchor in Walberswick, near Southwold, well known for selecting the very best seasonal, local ingredients and from them creating exquisite, mouth watering dishes.
The morning will start with locally-shot feathered game that might include pheasant or partridge. You’ll have the chance to pluck and draw your own bird before enjoying a cookery demonstration from The Anchor’s head chef, Mike who will share with you his favourite game dishes as well as passing on tips, ideas and advice.
Over a relaxing lunch in The Anchor’s dining room you will be treated to an inspiring tasting menu of game dishes including some of those demonstrated earlier in the day. After lunch we’ll have a look at rabbit and Ray will demonstrate how to skin and butcher a rabbit and you’ll each get to have a go too.
You’ll leave the day with the confidence and inspiration to prepare your own game at home, a handful of creative recipes to impress your friends and even some of the game you have prepared yourself!

Beer Academy at The Anchor, Walberswick

On behalf of our friends at The Anchor, we’re pleased to tell you about the Beer Academy, which was set up by a small group of beer enthusiasts, including Mark Dorber of The Anchor. We’re delighted to tell you about the Foundation Course running at The Anchor in the spring. The day is a great introduction to the world of beer for beer novices and enthusiasts alike and includes taste training; beer and food matching; beer presentation; beer styles and beer and health. Course tutors are experienced master brewers with a passion for beer!
