Take a behind the scenes tour at Pinney’s of Orford. Visit their 50 year old smokehouse and oyster beds, sample their products over a delicious seafood lunch and learn how to open oysters and carve whole smoked salmon.

You’ll enjoy a delicious seafood lunch of Pinney’s smoked fish and oysters and for anyone who wants to there’s a chance to learn how to open oysters and carve whole smoked salmon – not as easy as the experts make it look!
Pinney’s of Orford and their sister resturaunt, The Butley Orford Oysterage, are both much-loved Suffolk institutions. The smokehouse and oyster beds are usually out of bounds to members of the public, but on the Food Safari Smokehouse Tour we gain exclusive access.
The Pinney family came to Orford over 50 years ago and reinvigorated the Roman oyster beds at Butley Creek. Richard Pinney and his German wife also built a smokehouse on the side of their home to preserve the fish they caught. Bill Pinney, Richard’s son who runs the business, will take us on a private tour.
The Pinney smoking method uses nothing high tech – it’s an art using gentle smouldering whole oak logs in a unique smokebox designed by the family. It’s down to the skill and experience of Bill and his staff that they produce a consistently delicious product. You’ll be amazed by how simple and unadulterated their products are compared to the heavily processed smoked salmon and other smoked fish you find in the supermarket.
At the oysterbeds we’ll hear about the difference between native and Pacific oysters, how they are hatched. You’ll get to see and touch some freshly trawled oysters and see how they are carefully cleaned to prevent any contamination.
If you are lucky we’ll also see some beautiful lobsters caught by the family’s fishing boats and held in pits until they are needed in the restaurant.
Back at the Butley Orford Oysterage you can relax with a glass of wine and taste a range of their smoked fish including smoked salmon, prawns, haddock, trout and of course the oysters.
After pudding there’s a demonstration of how to shuck oysters and carve whole smoked salmon and anyone who wants to can have a go.
